My Yummy Creations

We had a little Halloween lunch at work yesterday. Since I am new here I made a couple of my sweet creations to introduce them to people in the new office. They were a hit. I made very cute cookies. There were some bats wtih red eyes, tombstones that read RIP and ghosts. The ghosts were my favorites. I had boy ghosts and girl ghosts with little pink bows. I know, not so Halloween creepy but darn cute! The cookies are made from scratch. I have morphed a sugar cookie and an almond cookie for this recipe and I think they taste great! It took many failed batches because not only do they need to taste delicious but they also have to hold up to the fondant decorations that go on them. The consistency is important. Dense but not so much that they are gross.

My second offering yesterday, were red velvet cake pops or cake truffles on a stick as I prefer to call them. I hand dipped them in orange chocolate and covered them in orange, black and white sprinkles. Too cute and super deliciousness!!!

These are just a few of the things I make in one of my two side jobs. I make cakes, cookies, cupcakes, invitations and all sorts of other delights as part of my wedding and event planning business. The rejections keep coming.

I am a Miami girl. Grew up here. Love it here...or at lest I did. A few years ago I would never have even considered living anywhere else. Well, things have changed. I am not so sure I want to raise my children here. I am sure that I want them to grow up closer to their cousins. My brother, Allan, moved to Atlanta, GA in 1999. He is now married and has two gorgeous little boys, Adrian and Gabriel. My kids miss them like crazy every day. So, the hubs and I have decided we want to move up there. There are many reasons why.....

The cost of living in Miami has grown at warp speed over the years and salaries have never kept up and to make things worse, now there is a great likelihood that the hubs, a corrections officer for the county, will have to take a pretty substantial pay cut to balance the budget. Blah!

Traffic sucks. There is no other way to put it. I drive all of 8 miles to work and it takes me close to 40 minutes!!

Our public schools are not ranked very well. And everyday there are stories of school violence or just general incompetence by staff. I don't want my kids to have to suffer the consequences of that.

The list goes on and on. So our decision stands. The hubs has sent out applications to a few local police departments and we are waiting to hear from them. I have sent out close to 100 resumes to positions I am over qualified for, positions I am a great fit for and some that I am no where near qualified for. I figured having over 10 years experience in a field and being bilingual would have assured me at least some interest by employers in Georgia. But alas......

NO! I have gotten more rejection emails than I can count!!! The last one came this morning. I am starting to feel a little discouraged, but I can't. This is what we want and I will keep trying. Maybe if my address didn't say Miami I would have a better chance. I don't know. I will keep you posted on our progress. Keep your fingers crossed for us!!

Coupons Galore!

Channel surfing left me hanging ten TLCs Extreme Couponing. I've never seen the show before but I've heard of it. Now, I love finding a good sale, but I rarely ever use coupons. I don't get a newspaper and I don't really check junk mail but I would love to save that kind of cash! Do I want 134 boxes of couscous? Hell no!! What are these people thinking? They have more than they can ever consume.

There are some that donate to charity. I commend those ladies but the rest are just Hoarders (now there's a show I'm addicted to but that's for another day) with great organization skills.

Coupon divas, bring on your smarts. I am ready and eager to learn!!

Welcome to my Bombshell World!!

So I finally did it. I started a blog. Why? Because I have so much spare time I need something to occupy me? Yeah, right!!! No. The truth is, I have so much going on I hope to use this blog to keep everything straight.

So I'll start by introducing myself. My name is Raquel. I'm a daughter, sister, wife, mother to a 3 and 4 year old and an iPhone addict. I LOVE high heel shoes and shopping. I have a regular 9-5 job as a Contract Manager. I am a certified wedding planner. I also make cakes, cupcakes, cake pops, invitations and all sorts of other party goodies. I am also trying to get a clothing boutique that specializes in plus size clothing going. I'm so close to 40 it hurts and....I'm a Bombshell. Who designated me a Bombshell??? I did!! You will too. Just stick around and you'll see I'm right.

I live in Miami right now but we are trying to move to Georgia so our kids can grow up closer to their cousins.
